A crisp single origin coffee with notes of jasmine and guava.

Light Roast.

 

Worka Sakaro is a washing station in the Gedeb zone of Ethiopia. The 410 smallholder farmers have farms ranging from 1 to 10 hectares and are all organized around the Worka Sakaro station. The family who runs the washing station is very focused on quality. Therefore, they set up seasonal cherry collection sites – to minimize the overland travel for the coffee cherries.

The collection sites also provide an additional quality check point for the washing station. They check for uniform ripeness of the cherries, foreign matter and overall quality, before they start processing the cherry.

First the skin on the coffee cherry is stripped off, leaving the sweet and sticky mucilage (fruit pulp) as the outer layer.

Now that the coffee is “de-pulped” it is time for the first fermentation. Coffee is poured into big tanks and left fermenting with minimal water for 48 hours, then rinsed again. Next the coffee is poured onto the drying beds, where they are constantly rotated and aerated until properly dried.

The effort with the processing combined with the high altitude makes up for a delicious and crisp cup with notes of jasmine and guava.
