A syrupy coffee with flavor notes of horchata and lime zest.
Our first coffee from this sub-region of Oaxaca is this community lot from Santa Cruz Ozoltapec. A deep sweetness is present throughout the entire cup, reminiscent of horchata; sweet, creamy, spiced, and comforting. To balance out the sweetness a high note of lime zest creeps in and gives this coffee a little zing.
Coffee from this region has dramatically evolved in recent years with more of the production happening among small holder farmers. After large fights with roya fungus on farmers, large estates in the lower lands moved away from coffee. Today the coffees out of this region are showing us their true character as only the smallest farmers have continued production in this area and access to specialty markets has improved.
